Rezdora is celebrated for its commitment to the culinary traditions of Emilia-Romagna, a region that has shaped much of what the world thinks of as Italian cuisine. We came to see whether the menu lives up to that pedigree, and to taste, in particular, the pasta.

Appetizer
Gnocco Fritto with Cured Meats
Prepare for a delightful reinterpretation of Italian cuisine with the Gnocco Fritto, featuring Prosciutto di Parma, Mortadella, and Guanciale. This dish, Italian fried bread with cured meats, truly stands out as a unique and elegant appetizer.
The star of the show is undoubtedly the fried bread. Each piece is super light and airy, a testament to perfect preparation. Its inherent flavor is wonderfully complemented by the rich prosciutto, creating a harmonious blend that immediately captures your attention. What truly elevates this bread, however, are the subtle salt crystals, which provide bursts of savory flavor that make every bite an experience.
This isn't your nonna's traditional pasta; it's a refreshing and different take on Italian cuisine. The dish is simple yet elegant, demonstrating that sometimes the most profound flavors come from the most straightforward concepts. Among the trio of cured meats, the guanciale might just be the best, offering a deeply savory and melt-in-your-mouth quality. My only real wish? That there was simply more of it.

Uovo Raviolo Di Nino Bergese
The Uovo Raviolo Di Nino Bergese — brown butter, tartufo nero, and chanterelles — is a culinary masterpiece that promises, and delivers, a truly indulgent experience. This dish is essentially one giant ravioli, a concept that is as exciting as it is delicious.
From the first bite, you are greeted with a flavor explosion that is unashamedly mushroom forward. The creamy sauce is rich and intensely earthy, complementing the fungi beautifully. Nestled in the center of the pasta is a perfectly runny egg yolk and a generous amount of cheesy spinach. The combination of the cheese and the egg yolk works in perfect harmony, creating a profoundly pleasant flavor profile.
What truly elevates this dish, making it unforgettable, is the rich egg yolk combined with the aromatic shaved truffles. While the mushroom sauce sort of overpowers the subtle flavors, it does so in a good way, ensuring a bold and memorable taste with every mouthful. The only minor point of contention was the pasta itself, which felt a bit undercooked — perhaps a touch too al-dente. The cheese and spinach filling also leaned slightly toward the salty side.
Despite these minor quibbles, the Uovo Raviolo is an experience I would definitely order again.

Torta D'Oliva
A truly enchanting dessert experience with the Torta D'Oliva, an olive oil cake presented in quattro modi — in four ways. From the first bite, this dish is simply magical.
This is undoubtedly one of the best olive oil cakes I've ever tasted. The olive oil flavor is definitely present but in the most delicate and harmonious way, imparting a rich, nuanced taste. The cake itself is a marvel of texture, being both incredibly moist and light.
The accompanying elements — the cream on the cake and the vanilla gelato — complement the cake perfectly, adding layers of smoothness and subtle sweetness without overpowering the star ingredient.
In summary, the Torta D'Oliva is simply amazing. It's so good, in fact, that I would come back just for this dessert alone.

A unique and delightful combination, balancing refreshing and toasted notes. Walnut-dominant, with the bourbon taking a backseat. Well-executed and enjoyable.

A sophisticated and potent reinterpretation of an Old Fashioned. Strong bourbon presence upfront, followed by a subtle, lingering aftertaste of Amaro and bitters.
